Eggcellent News About Eggs

You have heard the catchy tag line, "the incredible edible egg", well here are some interesting facts you should know. Where do white eggs and brown eggs come from? White eggs come from hens with white feathers and ear lobes. Brown eggs come from hens with red feathers and ear lobes. How long do eggs last? Egg cartons from USDA inspected plants must display a Julian Date which is the date they were packed. Eggs coming from non-USDA plants don't have this requirement. Many manufacturers do put an expiration date on the package which is usually 30 days. It is probably best to eat the eggs within a few days of the expiration date as to avoid illness from Salmonella or other bacteria. Eggs are nutritious. They are considered a nutrient dense food which means they have a high proportion of nutrients to calories ratio. A large egg has about 73 calories and provides thirteen essential nutrients. They are a great source of protein, choline which is good for the brain, vitamin B2, folate, vitamin A, vitamin D, lutein, zeaxanthin and lest we forget Omega 3 fatty acids which are so vital to cardiovascular health and too many people don't get enough of.

Before you down just any old eggs consider these facts:

Pasture raised - known as free range eggs contain:
* 1/3 less cholesterol
* 1/4 less saturated fat
* 2/3 more vitamin A
* Two times more omega-3 fatty acids
* Three times more vitamin E
* Seven times more beta carotene
* Three to six times more vitamin D

This is compared to the USDA data for factory raised chickens which of course are bound to a tiny little cage with no exposure to the outside & fed grain diets that are not natural & grain that is usually treated with pesticides. The vitamin D is especially important as we are continuing to discover how vital this nutrient is to preventing heart disease, cancer, diabetes and even multiple sclerosis. The Yolk is not evil. Although the egg white contains over 95% of the protein in the egg, the egg yolk is what holds most of the key nutrients & vitamins. So if you eliminate it because you think the cholesterol is to much, then your losing out on the benefits. The farm raised eggs contain more heart healthy Omega 3 fatty acids and a large scale study reported in the Medical Science Monitor showed that people who ate eggs even every day did not increase their risk of heart disease or stroke and even had improved blood pressure. So eat the yolks too. Get the nutrients you need. Eat pasture raised - farm raised - eggs preferable organic if you can because this will also eliminate the concern over pesticides on the grazing grounds and in the feed used for these chickens. Always wash your hands after handling eggs before touching anything else just in case there is bacteria on the shell. Never eat raw eggs this could be dangerous.
